Besides beautifying your fireplace, doors serve two other purposes as well.  First, they prevent any sparks from escaping into your room.  Typically, when you are burning your fireplace, you can leave the doors open and close the screen or gate mesh.  This allows heat into the room, but gives you spark protection.  When you're ready to leave, and the fire has burned down to a lower level, you can close the doors to prevent sparking.  Since you have now shut off the fireplace's airflow from the room, you will lose no air (which you have paid to heat with your furnace) up the flue.
